Black Muscat, another underappreciated Muscat variety, is known in Europe as a table grape variety, Muscat Hamburg, one of the very few black skinned Muscats. The rose-like aroma led Quady to name the wine Elysium, which is Greek for heaven. Andrew Quady believes that drinking this, you can almost feel you have fallen into a rose garden and been transported to heaven - but then I suppose he would. The wines is made in the same manner as Essensia, and is used, like Essensia to either accompany or replace dessert. One favourite is to pour the wine onto vanilla ice cream. Serve Elysium Sundae with a glass of Elysium. Great with vanilla, dark chocolate, blue cheeses, and, for those die-hard romantics, candlelight! Quady Winery specializes in dessert wines from under-appreciated Muscat varieties, in ports, and in aperitif wines. Essensia and Electra made from Orange Muscat and Elysium from the Black Muscat variety can either accompany or replace a dessert. Starboard, a port type wine made in a fruit forward-softer style, is Quady's euphemism for port. It is made in two styles: Batch 88 for current drinking and Vintage Starboard, for bottle aging.
